With managing work, graduate school and let's face it - life - my chocolate and sweet cravings have peaked more than normal. Using my knowledge and years of experience I first deconstruct my own cravings, looking for the root. While that usually clinches the craving, occasionally I enjoy a piece of dark chocolate or healthy versions of common treats...
Remember: perfection is only an illusion.
Why healthy versions? Simply put - sugar does a number on my body. My energy levels plummet, my emotional health gets all wonky and my concentration... wait- what were we talking about?? (please, please tell me I'm not the only one!)
So to enjoy feeling good in my body by maintaining a balanced blood sugar while also enjoying a bit of chocolate, I'm sharing my favorite Dark Chocolate Protein and Fiber packed brownie recipe!
Try it out and let me know what is new and good in your life. Love to hear from you :)
PS. **Warning: this recipe is for serious dark chocolate lovers. And yes, it is gluten free as well for my celiac/autoimmune friends (always looking out for you!).
Tip: If this is your first time buying coconut sugar, I like to buy it from the bulk bins so I only buy what I truly need.
Dark Chocolate Chickpea Brownies
• 1 can chickpeas (drained & rinsed)
• 1/3 cup raw cacao
• 1/3 cup coconut sugar
• 2 eggs
• 2 tbsp coconut milk
• 2 tsp baking powder
• 1 tsp vanilla extract
• 1/2 cup chopped dark chocolate
Preheat the oven to 350, and line or grease an 8 inch square baking dish.
Pulverize the beans in a food processor. Add the rest of the ingredients and combine well. Pour into the lined baking dish(because then you have easy clean up) and pop in the oven. Bake for 25 minutes. Enjoy!
